Roasted Red Pepper Guacamole Dip

Did you know that the word guacamole came from two Aztec words ahuacatl (avocado) and molli (sauce)? Being 100% Mexican, I think it’s safe to say that I know how to make guacamole (I basically make this in my sleep all the time) and soon you’ll be an expert too!

You will need:
  • 1 Ripe avocado
  • 1/4 of a lemon (or lime)
  • 1/2 a cup of roasted red peppers (I use jarred Mezzetta peppers)
  • pinch of salt (the amount of salt is really up to you and how ripe your avocado is)
  • a sprinkle of black pepper
You first cut the avocado in half and after you’ve taken off the skin and seed, place it in a bowl to smash with a spoon. You should know that if you dice the avocado before you mash it in a bowl, it makes it a thousand times more easier on you. After you’re done with the stress-relieving mashing part, dice the roasted red peppers and then mix them into the bowl. Add the salt, pepper, lemon (watch those eyes!), and mix in well with the rest.
That’s it! Seriously. What you choose to eat it with is up to you, I go with tortilla chips (classic) unless I have a nice juicy steak in front of me. Enjoy!
