Eat It Up: Sausage and Spinach Egg Noodle Pasta
So I feel like the only way I'll ever write recipes on here is if I post food pics on my story and I get multiple requests to share the details. So here we go...
What I used (serves 4... or 2 if you are really hungy):
- 3 cups of wide egg noodles (mine were locally sourced but similar here)
- 3 cups of washed baby spinach
- 2 Italian sausages (rolled into balls and cooked in olive oil)
- 1 clove of garlic diced
- 1 cup of chicken broth
- parmesan cheese
- seasonings: salt, pepper
I want to say this took me around 30-45 minutes... but I kept getting distracted with the My Favorite Murder podcast.
While I was waiting on the egg noodles to boil through (drain them once they're cooked and set to the side)... I chopped up garlic and placed it in a frying pan with a bit of olive oil. I set it on low-med heat so it wouldn't burn through the garlic, but create more of a sauté.
I basically took apart the Italian sausage and with my hands rolled them into individual balls before putting them in the frying pan with the hot olive oil and garlic. I seasoned the sausage balls with salt and pepper, and other random spices I found, then let them cook through.
In another frying pan, I added a bit of olive oil and sautéd the baby spinach with some salt and pepper for seasoning. I only let it cook through for about a minute and then I added the cup of chicken broth. I mixed in the cooked noodles, and the sausages, then removed the pan from the heat once it started to boil through.
I added the parmesan once I served them in individual bowls (b/c I add SO MUCH cheese to my own).
That's it! Okay well I have to go now because I've hit a SERIOUS food coma...
P.S. Yes, I know that egg noodles are technically not pasta, but I get to call it what I want b/c I licked my bowl clean!
